Cucumber Gazpacho

Ingredients

  • 1/2 Jalapeno Pepper (diced)
  • 1 Shallot (diced) – 1/2 for gazpacho,  1/2 for garnish
  • 1 Clove Garlic
  • 1 English  Cucumber (sliced)
  • 1/2 Cup Cilantro
  • 1 Lime (juiced)
  • 1 Cup Plain Greek Yogurt
  • 1/2 Cup Sour Cream
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 1 tsp corrainder
  • 1 Tbsp Olive Oil

Garnish Options:

  • Poached Shrimp
  • Cucumber Slice
  • Diced Shallots
  • Lime Zest
  • Micro Greens (i.e. pea sprouts, radish sprouts)
  • Edible Flowers
  • Sour Cream Swirl (3 Tbsp Sour Cream + 1 Tbsp Water)

Instructions

  1. Place all ingredients in a blender and blend until fully mixed.
  2. Refrigerate until ready to serve.
  3. Serve in chilled bowls, topped with optional garnishes.
