18 Aug Cucumber Gazpacho
Ingredients
- 1/2 Jalapeno Pepper (diced)
- 1 Shallot (diced) – 1/2 for gazpacho, 1/2 for garnish
- 1 Clove Garlic
- 1 English Cucumber (sliced)
- 1/2 Cup Cilantro
- 1 Lime (juiced)
- 1 Cup Plain Greek Yogurt
- 1/2 Cup Sour Cream
- 1/2 tsp salt
- 1/2 tsp white pepper
- 1 tsp corrainder
- 1 Tbsp Olive Oil
Garnish Options:
- Poached Shrimp
- Cucumber Slice
- Diced Shallots
- Lime Zest
- Micro Greens (i.e. pea sprouts, radish sprouts)
- Edible Flowers
- Sour Cream Swirl (3 Tbsp Sour Cream + 1 Tbsp Water)
Instructions
- Place all ingredients in a blender and blend until fully mixed.
- Refrigerate until ready to serve.
- Serve in chilled bowls, topped with optional garnishes.
