Spicy Lime Chicken Kabobs

  • 4 Boneless, skinless chicken breasts (cut into 1 1/2 inch cubes)
  • 3 tbsp Olive Oil
  • 1 1/2 tbsp Red Wine Vinegar
  • 1 Lime (juiced) (about 1/4 cup)
  • 1 tsp Chili Powder
  • 1/2 tsp Paprika
  • 1/2 tsp Onion Powder
  • 2 cloves Fresh Garlic (minced)
  • 1/4 tsp Cayenne Pepper (or to taste)
  • 1/4 tsp Freshly ground Black Pepper


  1. Whisk together the Olive Oil, Vinegar, Lime Juice.
  2. Season with Chili Powder, Paprika, Onion Powder, Garlic, Cayenne Pepper and Pepper.
  3. Place the chicken in a marinating bag (or glass baking dish) and add the marinade ensuring the chicken is coated.
  4. Marinate for at least 1 hour in the refrigerator.
  5. Pre-heat the BBQ to a medium high heat.
  6. Thread the chicken onto skewers (soaked if wooden) (oiled if metal).
  7. Use the remaining marinade to baste the skewers as the grill. about 12-15 minutes.
