The Perfect Roast Beef

Prep Time: 15 minutes.   Cook time 2 hours.   Resting Time 30 minutes.

A Word From The Cook

This is a guaranteed great way to ensure that your Roast Beef is cooked to perfection.

Ingredients

Beef:

  • 1 Roast of beef.   My preference is Top Sirloin or Prime Rib.   Rule of thumb is 1/2 lb per person.    A 4 lb roast will be good for 8 people.
  • 1/4 cup extra-virgin olive oil
  • 3 Cloves of Garlic (minced)
  • 1 TBSP Fresh Rosemary (chopped) or 1/2 TBSP dried Rosemary
  • 1 TBSP Fresh Thyme (chopped) or 1/2 TBSP dried Thyme
  • 1 TBSP Sea Salt
  • 10 – 12 Grinds of Black Pepper

Instructions

  1. Set Roast on wire rack on a baking dish in the fridge for at least 1 hour.
  2. Remove from fridge and let it come to room temperature before cooking.
  3. In a small bowl whisk the Olive oil, Garlic, Roemary, Thyme, Salt and Pepper to combine let is sit while the roast is coming to room temperature.
  4. Preheat Oven to 450°.   I use the Roast setting (if you have one).
  5. Rub the Oil mixture all over the roast, patting to ensure that the Garlic, Rosemary and Thyme stick to the sides.
  6. Place Roast on the middle rack of the oven, and sear @ 450° for 15 minutes.
  7. Turn temperature down to 300° and cook for an additonal 1 hour 45 mintues. (timing based on 4 lb roast).
  8. Check Roast for internal temperature.   Beef should be at 140 – 145.   Remove from oven, cover / tent for an additional 30 minutes.
  9. Pour the drippings from the pan into a pot to make the Au Jus for serving with the beef.
  10. Slice and enjoy.
